Meat

The UW-River Falls Meat Pilot Plant offers all the benefits of full-scale plant production but on a smaller scale. The pilot plant is a state-licensed meat facility located in the Food Science Addition, part of the Agricultural Science complex. The purpose of the plant is to support our teaching and outreach activities. A limited amount of product is available for purchase through our Falcon Foods Store in the Food Science Addition as well as Freddy's C-Store in the University Center. 

The Meat Pilot Plant is run by 6 to 8 undergraduate students primarily from CAFES under the supervision of the plant manager. Students gain hands on experience learning the many aspects of the meat industry including harvesting, fabricating, and value-added processing of meat products. Our students also play a role in maintaining high manufacturing standards focused on food safety and quality assurance.

The 2016 annual UWRF Campus Chops Sale is now being offered to support the UWRF Meat Animal Evaluation Team. The pork is raised at the UWRF Mann Valley Farm and is processed through Falcon Foods. See this flyer for more information about pricing, deadlines and ordering.
