FACTS
Each day the Kansas City Chiefs Training Table serves an estimated 180 players,
coaches, media and guests at each meal. Attendance at meals is mandatory for
the 80 players carried on the roster.
Players and coaches are offered four meals on most days: breakfast, lunch, dinner,
and an evening snack. Each meal consists of a wide array of choices. There are
many standing offerings for each meal in salad and sandwich bars. In addition,
each meal offers a hot food serving line with a variety of choices.
Servings are unlimited. The Chiefs estimate that the average player, particularly
linemen, burn 3,500 calories per day in camp. For most players, the meals are
a particularly welcome relief during the regimen of camp. The day starts early
with breakfast, specialty meetings, practice, weight training, lunch, a brief
rest period, specialty meetings, afternoon practice, dinner, specialty meetings,
team meeting, a brief release time on River Falls (Bo's N Mine is a favorite
gathering place), followed by a snack and 11 p.m. curfew. Coaches often will
continue late into the night reviewing the day's video and preparing for the
next day's practice. Snacks are a staple for those meetings, too.
Meals are prepared by UW-River Falls' contract catering food service: Chartwells

Mike Owen, production chef; Samantha Thompson, catering manager; Jennifer Conde,
retail sales director; Sally Solum, resident food service director; and Stephanie
