Students learn the technical knowledge of dairy manufacturing, including: milk, cheese, and ice cream processing. They will get a unique opportunity to work in a commercial plant setting in the university's dairy plant. The dairy plant uses raw milk from the University Dairy Farm to provide learning experiences in production, sanitation, and quality control. Cheese, ice creams, and spreads are developed, produced and sold by students under the direction of a full time plant manager. We are the only program in the nation where students may work in the pilot plant to receive work credit for a Wisconsin Cheesemaker's License, Pasteurization Certificate, Bulk Milk Hauler License, or Antibiotic Test training.
